At the counter of the Violet bakery, confectioner and chocolatier, one can almost imagine Toni N. and Natalia Jaume Planells, the couple who run this business in the centre of Ibiza, shaping Belgian Calebaut chocolate, their essential raw ingredient, with their hands. The results of their work can be admired with a glance through their shop windows, because everything sold in this select shop has been prepared by them: mango chocolates, truffles, ginger and nuts, candies or, on the savoury side, with stuffed croissants, quiche, puff pastries and Galician empanada.

However, Violet also specialises in wedding cakes.

Toni and Natalia always make themselves available to the happy couple, advising them while listening to their preferences. “Nowadays we make a lot of individual cakes, because couples can pose any ideas that they have and we’ll try and create them,” they explain. “Muslin tarts (whipped cream or chocolate) are the most popular, but whatever one chooses, it will always be prepared with top quality raw materials.” We use, for example, jams with only 20% sugar and no hydrogenated margarines,” said Toni.

Moreover, Violet’s sweets are increasingly in demand as reminders: a bag with a selection of chocolates or lollipops crafted especially for the little ones makes a gift that is sure to be appreciated by all of the guests.
